What do you wish you could do more every day?

I wish I would remember to be mindful of enJOYing more each day. It can be very easy to stray from being thankful and enjoying this life He has given us!
In God’s many mercies, he gives us so much to be joyful about. The art of joy begins daily in the ‘heart’ and flows outward. It is quite contagious.
We need to make a choice to be more joyful in the moment, whether we are getting ready for the day, taking care of children, paying bills, or cooking….you get the point! While I prepared Skillet Enchiladas this evening for dinner, I put this into practice. Here is the recipe!
Easy Creamy Skillet Enchiladas
4 Boneless Chicken Breasts (trimmed)
1 1/2-2 heaping cups Shredded Cheese (any kind you prefer; I used a pre-shredded Mexican blend tonight but normally I shred my own cheese because it’s cheaper!)
1 heaping cup of Sour Cream
1 jar of Herdez Salsa Verde (I chose mild for this but we love spicy as well)
Olive Oil
Salt & Pepper
Optional: Jalapeños
Optional: Tortillas
Boil your chicken for 20-25 minutes, drain & shred. I used to shred mine with forks, but now I do it in my stand mixer because it is so much easier. Meanwhile, get your skillet nice and hot & add a few tablespoons of olive oil. Sauté chopped jalapeños here if you’d like. Once your chicken is shredded, season your chicken well with salt and pepper. Add your shredded chicken, sour cream, salsa verde and shredded cheese to your skillet. Stir well over medium low heat until everything melts and blends together into a delicious, creamy consistency.
Now, we stopped here, added some extra cheese on top and I served this with cheesy, homemade hash browns on the side.
However, if you’d like, go one step further and add your creamy mixture into tortillas and roll each one up. Place them in a greased 9×13 dish, sprinkle more cheese on top and bake for 20-30 minutes at 350°. This made enough to feed my family of five plus leftovers.
