
Homemade food is healthier for you. It is better quality, tastes better, and saves money. It cultivates creativity and our labor is not without purpose. While you labor to make your food from scratch – it is so worth it and it is very therapeutic!
I was looking for an easy tortilla recipe that used olive oil instead of butter…knowing, however, that I really wanted to make a delicious ‘fluffy flatbread’ style tortilla, not standard thin-pressed tortillas.
Thanks to http://www.mexicanplease.com, I found what I was looking for. I used baking powder for a delicious thick, flatbread (she explained sometimes she uses baking powder and sometimes not; omitting the baking powder makes them thin and not fluffy…good to know for when I do want to actually make thin tortillas for our Mexican meals).
The ingredients list is minimal. You most likely have these already in your pantry. This flatbread doesn’t even need any yeast!
**Ingredients**
Flour, 3 1/6 cups (she originally called for 3 cups)
Baking Powder, 1 1/2 Teaspoons
Salt, 1 1/2 Teaspoons
Warm Water, 1 Cup
Olive Oil 1/3 cup (she originally called for a 1/4 cup)
**Instructions**
Mix dry ingredients together in a bowl. Add olive oil and warm water. Mix until a dough forms. You may need to add a little extra flour if your dough is too sticky. Once your dough is formed, sprinkle flour on your surface and knead your dough for about four minutes. It will look like this:

Cover your dough with a towel and let it rest for about 30 minutes. Once the dough has rested, cut it in half and then cut each half into approximately 6-8 pieces, depending on the size you want. Roll each piece out like this:

She advised to cook in a dry iron skillet…but… I did not do that. If I were making thin tortillas I would do it that way. But for this flat bread, I heated my iron skillet with olive oil. (These also could be cooked in a non-stick pan, BUT if you don’t already own a cast iron skillet, buy one! We found ours brand new at a thrift store. They are worth it. They are actually easy to season and clean…and everything tastes better when cooked in a skillet! We use ours for everything.)
After heating your olive oil (coat bottom of pan) on medium heat, cook your flatbread in batches and set aside on a plate. They cook quickly! The results are delicious:

Serve these fresh and warm. They are delicious just as they are! Plain, simple but very tasty. If you’d like, they can be served with butter or dipped in a little olive oil with herbs. These are great as a side with soups, hummus, and more. For a sweet touch, serve with a a little brown sugar-butter spread, jam, etc.
Lastly, spice it up! You can add spices to your dry ingredients mixture such as garlic powder, curry powder, cinnamon & nutmeg and more for a different skillet flatbread flavor profile.
